English verb distinction, French preposition question

1. What is the difference in meaning and use between the English verbs SEEM and SOUND? Example: that seems like a good idea. That sounds like a good idea. When would you use one and not the other?

2. What is the difference between une bouteille DE champagne and une bouteille DU champagne? Is one incorrect?
