how to avoid linguistic confusion?

just curious to know what you think is the best method when learning a new language? is it best to learn one at a time or is it possible, and could there even be cases in which, it might actually help, trying to learn more than one language simultaneously? obviously for children, it's probably most ideal to learn languages at the same time, but for one who is past that so-called critical period, like adults - how is the best way to proceed with foreign languages? i am really wanting to study german more in-depth, independently but still as thoroughly as i can, (with the help of a friend who has kindly offered to tutor me once a week :) but at the same time i am taking a spanish class that i'm formally enrolled in, so i'm afraid the two will interfere and i'll end up not learning very much in either subject. would love to hear your thoughts on this :)
